The muesli is easy to prepare, tastes fantastic and is also completely climate-friendly. The recipe is purely plant-based, because this is the biggest lever for reducing the food footprint. Ingredients

For 1 person (Bircher mix in stock)

For the Bircher base mixture

  • 200 g (gluten-free) oat flakes
  • 200 g millet flakes
  • 200 g buckwheat flakes
  • 100 g linseed
  • 100 g raisins
  • 100 g sunflower seeds
  • 100 g pumpkin seeds

For the muesli

  • about 40 g Bircher mixture
  • 1 pear (or apple)
  • 1 tbsp nut butter (e.g. cashew or almond butter) and water
  • OR 100 ml ready-made plant milk

optionally:

  • ½ tsp ground cinnamon
  • ¼ tsp ground ginger
  • 1 pinch of salt
  • Nuts, seeds and dried fruits as desired

preparation

For the Bircher mixture, mix all ingredients in a large bowl and pour into a large sealable storage jar.

For the muesli, soak the desired amount of flakes the night before. To do this, put the Bircher mixture in a small bowl, cover with water and leave to soak overnight at room temperature.

To serve, coarsely grate the pear, leaving out the stalk and core. Fold the grated pear into the swollen flakes. Make a nut milk from the nut butter and about 80 ml of warm water in a blender. Optionally season with cinnamon, ginger and/or salt. (Alternatively, put all ingredients in a tall container and puree with a hand blender.)

Pour the nut milk over the muesli, stir and optionally enjoy with chopped nuts, seeds and/or dried fruit.
