Five minutes of porridge

For everyone taking part in the Good Food Collective 's "Three Days of Climate-Friendly Cooking" challenge: This is breakfast from day two. :) Lovingly created by Estella Schweizer , an expert in climate-friendly cooking, and as always full of regional, plant-based and nutrient-rich ingredients. We love this warm breakfast recipe because of the different flavors that unfold so wonderfully.

Ingredients

For 4 people

  • 200 g oat flakes
  • 1 organic lemon (peel only)
  • 4 small bananas
  • 1 tbsp coconut oil (optional)
  • 100 g ground almonds or other nuts
  • 50 g raisins
  • 1 pinch of salt
  • 1 pinch of cinnamon

preparation

Cover the oatmeal in a bowl with just enough boiling water and let stand for 5 minutes.

In the meantime, wash the lemon with hot water, dry it and finely grate 1 teaspoon of the peel. Peel the bananas.

If you don't have time, just chop the bananas into four bowls. If you have a little more time, halve the bananas lengthways and fry them in oil until golden brown on both sides.

Mix the soaked oat flakes with almonds, raisins, lemon peel and salt thoroughly with a fork until everything is creamy. Either spread the oatmeal over the sliced ​​bananas or arrange it in four bowls and top with the fried banana. Sprinkle with a little cinnamon. A lovely breakfast! :)
