Omega-3 porridge with fruit compote

Omega-3-Porridge mit Fruchtkompott
This porridge provides you with plenty of Omega 3 for the whole day! :) It is the breakfast of day three of the Good Food Collective 's challenge "Three days of climate-friendly cooking". Like the other recipes from the challenge, it was created by Estella Schweizer , an expert in climate-friendly cooking. It tastes and looks great too.

Ingredients

For 4 people

  • 4 tbsp peeled hemp seeds
  • 60 g walnuts
  • 100 g (gluten-free) oat flakes
  • 2 tbsp ground linseed
  • 4 tablespoons dried berries (or other dried fruit)
  • 1 pinch of salt
  • Fruit compote from the jar
  • 4 tbsp linseed oil
  • 4 tbsp maple syrup

preparation

For the porridge, make a hemp seed milk. To do this, put the hemp seeds in the blender with 400 ml of warm water and puree for 1 minute (alternatively, pour into a tall container and blend with a hand blender). The seed milk does not need to be strained through a nut milk cloth, as the fibers of the hemp seeds will not interfere with the porridge later on.

Roughly chop the walnuts and mix them with the oat flakes, linseed, dried berries and salt in a bowl. Pour the warm seed milk over them and leave to swell briefly.

Before serving, stir the swollen porridge well with a whisk so that the flakes combine to form a creamy consistency.

Divide between four large glasses, drizzle each with 1 tablespoon of linseed oil and 1 tablespoon of maple syrup and serve with the fruit compote.
