Brussels Sprout Pasta Quick Recipe

For this recipe, we have to go into a bit more detail: Yesterday, we were stuck in a basket with 50% off goods in our local supermarket - goods that no longer look particularly nice, but still taste delicious. And there were these dark-colored Brussels sprouts. As expected, you only had to remove the outer leaves to discover the beautiful green inner values ​​of the small vegetable. So a quick recipe was needed to use up the Brussels sprouts as quickly as possible. This recipe with smoked tofu is similar to traditional cabbage recipes with ham or sausages. This pasta recipe is vegan, however :)

Ingredients

For 2 servings

  • 500g Brussels sprouts
  • 250g pasta
  • 1 onion
  • 2 garlic cloves
  • Oil of your choice
  • Some vegan milk
  • Yeast flakes
  • Pepper & Salt
  • Fresh herbs, e.g. cress

preparation

Cook the pasta according to the instructions on the packet.

Wash the Brussels sprouts, remove the outer leaves if necessary and cut into boats (quarter/halve depending on the size of the Brussels sprouts). Cut the onion into thin rings or small pieces and press the garlic.

Fry the onions in a pan with a little oil. Now add the garlic and Brussels sprouts and fry everything for 5 minutes. Add the finely diced smoked tofu and continue to fry everything until the Brussels sprouts are soft enough. Add a little water if necessary.

Towards the end of the cooking time, add plant-based milk to taste and a teaspoon of nutritional yeast to make the mixture a little creamier. Season with salt and pepper and serve garnished with oat flakes and fresh herbs.
